Tenkr\u00e1t bylo b\u011b\u017en\u00e9, \u017ee v\u00edno bylo p\u0159i skladov\u00e1n\u00ed vystavov\u00e1no p\u0159\u00edstupu vzduchu, a tak doch\u00e1zelo k jeho rychl\u00e9mu ka\u017een\u00ed. Snadno ho napadaly ne\u017e\u00e1douc\u00ed kvasinky a bakterie. Vina\u0159i starov\u011bku konzervovali v\u00edna prysky\u0159ic\u00ed (z borovice \u010di jedle) a r\u016fzn\u00fdmi druhy rostlinn\u00fdch v\u00fdluh\u016f. Dal\u0161\u00ed konzerva\u010dn\u00ed p\u0159\u00edsadou byla pota\u0161, vyr\u00e1b\u011bn\u00e1 z popela tvrd\u00e9ho d\u0159eva, n\u00e1hodn\u011b zkombinovan\u00e9 sm\u011bsi bylin, prach z mramoru, pep\u0159 a s\u016fl. Ke konzervaci sud\u016f slou\u017eila s\u00edra, u amfor se pou\u017e\u00edvala tak\u00e9 s\u00e1dra. Chu\u0165 V\u00fd\u0161e uveden\u00e9 l\u00e1tky na vylep\u0161en\u00ed chuti a konzervov\u00e1n\u00ed byly pravd\u011bpodobn\u011b p\u0159\u00ed\u010dinou zna\u010dn\u00e9 zm\u011bny chuti v\u00edna. Tyto \u00fapravy byly prov\u00e1d\u011bn za cenu velk\u00fdch ztr\u00e1t v tomto sm\u011bru. N\u011bkter\u00e9 bylinky byly p\u0159id\u00e1v\u00e1ny i s c\u00edlem v\u00edno u\u010dinit zdrav\u011bj\u0161\u00edm (nap\u0159. m\u00e1ta, mandragora, aloe, \u0159\u00edmsk\u00fd km\u00edn, pelyn\u011bk, \u0161alv\u011bj, tymi\u00e1n).
